What To Do With B1G2 Free Bags of Potatoes From Big Y

Starting on Thursday, April 3rd, Big Y will have five pound bags of Russet potatoes on sale buy one, get two free.  Each bag of potatoes will only be $1.34 each.  For most, 15 pounds of potatoes is just way too much.  However, if you can find something to do with the potatoes, you can save a lot of money.  My mom has three freezer recipes for potatoes – all of which are delicious  - you can use to stock your freezer for cheap.  Mom kindly provided all three recipes for me, which I’ve included here.

Mashed Potato Casserole 
(Recipe can be made one or two days ahead of serving and is especially handy for holiday gatherings.)
 
5 pound bag  potatoes (any type of potato)
8 oz. bar cream cheese
1 cup sour cream
2 teaspoon garlic salt
1 tablespoon freeze dried chives
salt and pepper to taste
butter and paprika
Peel, quarter, and boil potatoes until tender.  Drain thoroughly.  Mash half of the cooked potatoes  (in a stand mixer if possible).  Add half the cream cheese, sour cream, garlic salt, and chives until thoroughly blended. Taste and add the pepper and additional salt if needed.  Put mashed potatoes in a large casserole dish greased with cooking spray and set aside.   Repeat the mashing process with the remaining potatoes and same ingredients. Add this second batch of seasoned mashed potatoes to the casserole dish,
dot with a little butter and and sprinkle paprika on top.  Cover and chill up to 2 days in refrigerator.  Bring to room temperature then cover and bake at 350 degrees about 45 minutes or until hot.
Any leftover, cold potatoes can be frozen in good freezer containers. Defrost and put in microwave dish to heat.
 
Roasted Potato Recipe
5 lb bag potatoes (best with red potatoes – but can be done with any variety)
4 tablespoons olive oil
2 teaspoons Herbes de Provence (or use your favorite spice blend)
salt, pepper and grated parmesan cheese to taste
Cut the un-peeled potatoes into quarters or evenly sized pieces and put into plastic bag.   Add oil, herbs, salt and pepper to bag and coat the potatoes well.  Turn out on a rimmed baking sheet prepared with cooking spray, sprinkle potatoes with grated parmesan cheese, and cook at 400 degrees for about 45 minutes or until done.
Freeze cold, leftover potatoes in freezer bags and use defrosted potatoes as home fries with a little bit of diced onion for breakfast or dinner.

 
 

Twice Baked Potatoes Recipe
(Plan on serving plain baked potatoes as a side for your dinner; after you eat, prepare the rest to freeze for use at a later date.)
 
5 pound bag (russet potatoes only)
1 stick butter
3/4 cup sour cream
1/2 cup milk
1 tablespoon freeze dried chives
salt and pepper to taste
Bake potatoes in 375 degree oven for an hour or until done.  When the potatoes have cooled enough to handle, cut in half – they should look like long ovals.   Leaving a thin layer of potato on the skin, carefully use a teaspoon to remove the flesh.  Using a mixer, combine potato with remaining ingredients until the mixture is lump free. Using a spoon, fill the skins with potato.  Put the potatoes on a baking tray, cover,  and refrigerate overnight. The next day, wrap individual potatoes in plastic wrap and place in a freezer bag before storing in the freezer. Defrost frozen stuffed potatoes; remove plastic wrap.   Top with paprika if desired, place on a baking dish  coated with cooking spray, and bake in a 350 degree oven for about 30 minutes.
